Fiction Kitchen Sink Cookies




The hosts of YouTube channel "Feast of Fiction" hosted an online baking giveaway where the grand prize was a Nintendo Switch! Being stuck in my apartment and jealous of everyone else's Animal Crossing adventures, I really wanted to win a free Switch.
Feast of Fiction's "Cherable Cookies" (Cher from the movie Clueless) included her favorite snacks, so the challenge was basically to use the base dough recipe below and add in whatever we had in our pantry!
This was a really nice opportunity to recycle and use up a lot of random ingredients and leftover components from other desserts, so I actually made 3 kinds of cookies. Look below for flavors.

Ingredients

1 cup (2 sticks) unsalted butter, softened

2/3 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg
-
1 tsp. vanilla extract

2 cups all-purpose flour

1/2 tsp. baking soda
-
1/2 tsp. baking powder
-
1 1/2 teaspoons salt (depending on your mix-ins)

2-3 cups small bits of ingredients of your choosing (see below for cookie flavors)

Instructions

Preheat oven to 350°F.

With a mixer, cream together the butter and sugars until light and fluffy.

Add the egg and vanilla extract. Continue to mix until fully combined and fluffy.

Add the flour, baking soda, baking powder, and salt. Mix on low until just combined.

Fold in your special ingredients. Don't overmix.

Cover and refrigerate the dough for at least one hour or up to 1-2 days.

Scoop 1 1/2 Tablespoons of dough on a cookie sheet with at least 3 inches of space between each cookie.

Bake for 10-12 minutes, or until the sides of the cookie begin to brown.

Cool on the cookie sheet for 5 minutes. Transfer to a wire rack to cool completely.

Store in an airtight container if not eating immediately.

Pictured flavor lineup:

Salted Egg: omitted the salt and added 4 mashed salted egg yolk (leftover from my salted yolk baozi and Cronut copycats) and 2 cups black sesame-white chocolate chunks. Sprinkled with black sesame seeds as a spin-off for Asian salted egg yolk cookies.

Miso Caramel Coconut Chocolate: added 2 cups leftover caramel-covered coconut and chocolate from my Asian Girl Scout Cookies. Added 3/4 cup extra desiccated coconut to the dough and omitted the salt.

Strawberry-Matcha Chocolate Mochi: added 3/4 cup dehydrated strawberries from the Special K box, 3/4 cup leftover matcha shortbread (also from Girl Scout Cookies) tossed with 1/4 cup melted white chocolate, 3/4 cup dark chocolate chunks, and a piece of mochi in the center (scraps leftover from Ichigo Daifuku)
